What is peer-review?

I've spent the last couple of years teaching information literacy and one of the big topics I cover with the classes I am invited it to speak to, is about peer review. Why is that? Because students by-in-large do not know what it is and I've found that instructors expect them to know what it is or explain it in a way that still leaves them a little confused about it.
